Gluten Free Lemon Pea Flower Mochi Waffles

Hi Bakers, This is an easy and delicious waffle to amaze your breakfast guests. You will need to get sweet rice flour and Butterfly Pea Flower Powder before you start. I buy mine on the internet, but you may be able to find it in a store near you.
I can’t stress enough how easy these are and how yummy they taste. These are so good, now I want to try making all kinds of other flavors too. What do they taste like? Sweet without any toppings. Chewy. Dense and moist with a lemony swirl. Delightfully good is what I think. Would you try these unusual waffles? I hope you do. Enjoy! ~Carolyn
Lemon Butterfly Pea Flower Mochi waffles
Adapted from Keeping it Relle’s recipe.
Makes 4-6 waffles
Waffle Batter
Dry
1 1/4 cups Koda Farms Sweet Rice Flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/3 teaspoon salt
Wet
3/4 cup milk
1 large egg
1/2 teaspoon vanilla extract
Whisk together the dry ingredients in a medium-sized bowl. Then, whisk together the wet ingredients and combine them. Make pea flower batter next.
Pea Flower Lemon Batter
1 tablespoon lemon juice
2 tablespoons granulated sugar
1 teaspoon lemon zest
1 teaspoon Butterfly Pea Flower Powder
Whisk all ingredients together in a deep cereal bowl. Add 1/3 -1/2 of the waffle batter and whisk together completely.
Add the pea flower batter to the waffle batter. Swirl slightly for an ombre effect. Don’t mix a lot, or you will have a uniform blue color!
Cook in a greased waffle iron according to your machine’s directions. Dust with powdered sugar. Enjoy!
