Tomato and Roasted Red Pepper Soup From Trader Joe's but better...

Hi Bakers,

Sometimes I eat other foods besides my bakes and this is an easy favorite I wanted to share! I hope you love it as much as I do and enjoy a great bowl of soup as the weather turns cold. Organic Tomato and Roasted Red Pepper Soup from Trader Joe's is so good right out of the box…but why not make it even better for you with more nutrition!  I like to add fresh garlic and veggies I have on hand, especially the ones that need to get eaten soon. Here’s how I spruce it up.

Sauté the following diced/sliced veggies  1/2 an onion, 1 rib of celery, and 2 medium carrots when they begin to soften add 1 small diced zucchini. Cook veggies until soft, then add 1 cup of chopped tomatoes with a bit of liquid. Cook for a few minutes to reduce the tomato juice in the pan for more flavor. Add 2 cloves of chopped garlic, and cook for another minute. Add boxed soup* and heat on medium heat while stirring. Garnish with a drizzle of good olive oil, Parmesan cheese, and fresh oregano or basil. This soup is perfect with garlic bread, grilled cheese, or mixed greens salad for even more leafy nutrition! Organic Roasted Tomato and Red Pepper Soup is already great and now it’s spectacular. Mom tip …I got my kids to eat more veggies by chopping things small and peeling the squash so they didn’t see it😂

  • The veggies should be thoroughly cooked before adding the soup since you just need to heat the soup not cook it.
