You just mix together the dressing, chop the nectarines, and everything else is ready-made. Summer Nectarine and Blackberry Salad with Thyme Vinaigrette
makes two salads
Vinaigrette
4 tablespoons Olive oil
2 tablespoons White Balsamic Vinegar
1/2 tablespoon water
1 teaspoon fresh chopped thyme
1/4 salt or more to taste
1/4 teaspoon black pepper
5 cups Mixed greens
2 sliced white nectarines
2 cups blackberries
2-4 tablespoons Cyprus Hill Meyer Lemon** and Honey Goat cheese or other goat cheese
1/4 cup roasted salted or candied walnuts
**This Meyer lemon and Honey cheese from Cyprus Hill is fantastic…I like goat cheese but I LOVE this one!
