Roasted Pear Salad with Honey Ginger Dressing

Hi Bakers,

Roasted Pear Salad with Honey Ginger Dressing is an unusual but flavorful salad that takes advantage of the bounty of pears in season! I was inspired by Cook’s Illustrated Pan Roasted Pear Salad recipe to make something similar using roasted pears. I made a light, sweet dressing with some heat from the ginger and chili flakes. The sweet caramel-tasting pears were perfect with crisp pecans, cranberries, and goat cheese. Try this salad tonight and you’ll be making it again soon! Enjoy~Carolyn

Roasted Pear Salad with Ginger Honey Dressing

Adapted from the Pan-Roasted Pear Salad From Cook’s Illustrated

Makes two salads

4 cups Mixed baby greens

1 large or two small pan-roasted pears* (I tried Bosc and Asian Pears and both worked well)

1/4 cup Goat cheese crumbles

1/4 cup pecan halves roasted or raw

1/4 cup dried cranberries

Ginger Honey Dressing

4 tablespoons olive oil

2 tablespoons white balsamic vinegar or other light vinegar

1/2 tablespoon water

1/2 tablespoon honey

1/2 teaspoon prepared ginger puree or 1/4-teaspoon fresh ginger puree

1/8 teaspoon salt

1/8 teaspoon black pepper

Dash of red pepper flakes

*Core and slice pears into 1/4 -1/2” slices. Toss in granulated sugar Brown in a pan on medium heat then, turn and  brown on the other side. Cool before using in salad.

Toss the salad with dressing and top with pears, pecans, cranberries, and goat cheese. Enjoy!
