Gluten-Free BLT Pizza with Microgreens

Hi Bakers, This may become your new favorite meal! Gluten-Free BLT Pizza?? This is a match made in heaven. Lightly dressed microgreens and sweet tomatoes sit on top of a chewy bacon and cheese-studded pizza. This is the best gluten-free pizza I’ve ever had and I made it! It was easy once I used the Italian Caputo Fioreglut flour. The dough is much less stretchy than the usual pizza dough but cooks into a chewy, delicious crust. I buy the flour online since it’s not in any stores nearby.
Gluten-Free BLT Pizza with Micro Greens
Makes one 12” pizza
Gluten-free Pizza dough, uncooked*
Dressing
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 tablespoon water
1/2 tablespoon dijon mustard
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 clove of garlic, softened for 10 seconds in the microwave and minced
whisk dressing together and set aside. You will have extra dressing unless you like to dip your pizza in it!
Topping
4-5 slices of cooked bacon broken into pieces
1-2 cups mozzarella cheese, shredded
1/2 cup Oaxacan or more mozzarella cheese, shredded
1/2 cup fresh cherry tomatoes, sliced
1 1/2- 2 cups microgreens
Pat the dough into a dinner plate-sized circle. Cover with cheese and then sprinkle with bacon. Follow your pizza crust directions for cooking. I cooked mine at 550F (the recipe called for a higher heat but my oven was maxed out) for 15 minutes or until bubbling throughout and browned on the bottom. this dough does not brown as easily as some but it’s still incredibly tasty! Remove from oven and top with microgreens and tomatoes. Drizzle with dressing** and serve immediately. Enjoy!
*I made the pizza dough recipe from the @Caputo Fioreglut gluten-free flour bag. Next time I would quarter the amounts used since it made enough for four 12” pizzas.
**if you want less dressing on the pizza, toss the greens with the dressing before putting them on the pizza
