Gluten-Free Fruity Protein Bites
Makes approximately fifteen 1” balls?? (I ate so many…this number is a guess)
Use a food processor to blend the following ingredients:
1/2 cup blanched almond flour
1/2 cup dried apricots (California or Slab style has more flavor)
1/4 cup dried unsweetened cranberries, cherries or blueberries
1/2 cup vanilla protein powder or vegan vanilla protein powder
-Blend together until no large pieces remain. Next add the following ingredients to the work bowl:
2 tablespoons honey (or more to taste)
1/2 cup smooth almond butter
-Blend together until thoroughly mixed. Now add the remaining ingredients:
1/4 cup Navitas dried pomegranate powder
a tablespoon of lemon juice or more as needed
-Blend once again. The mixture should be moist but still in tiny pieces. Scoop and form into 1” spheres. You may need to add more almond flour or honey to adjust the texture to form into firm balls.
Mix the coating together the small bowl of a food processor or spice grinder:
1/2 cup unsweetened dried coconut flakes ground with 1 tablespoon of pomegranate powder
Transfer coating to a small wide bowl. Roll protein bites in the coconut/pomegranate coating. Store in the refrigerator in a sealed container for up to 1 week…but they won’t last that long I promise! Enjoy!
