I should have tried making this years ago because it was so good and honestly easier than expected.
Here are Tips I wish I knew before trying to make a gluten-free pumpkin roll
1. Use ONE large piece of parchment paper large enough to cover pan not two (so cake doesn’t crack at the seam!)
2. Roll hot cake slowly and into a tight cylinder then let cool on a rack completely for a pretty swirl
3. Frost all the way to the edges of the cakes so the icing swirl is between all the layers
4. Make sure you have plastic wrap to chill the iced cake into a tight roll
This was my first time EVER making a roll cake and I made it gluten-free at the same time…This was a big success even with a few cracks and I will be making this one again.
