When you substitute gluten-free flour instead of wheat sometimes things turn out differently….Too thick to be a cookie but my no waste solution was the waffle iron. These waffle cookies are sweet and full vanilla flavor with a touch of sesame and good enough you may never make regular waffles again! They were really good eaten plain or very treaty topped with raspberry sorbet and fresh fruit. You can make these using the recipe from Fifteen Spatulas with the following substitutions
