Not a Korean corn dog but, another kind of corndog… What do I call this quick gluten-free creation that’s perfect for July 4th? A dog in a blanket? Dogito? Corn Tortilla dog? This crispy corn tortilla wrapped around a hotdog is about as simple as it gets. To make it you can use any gluten-free corn tortilla and soften it by frying it in oil about 10 seconds on each side until it’s more pliable. You can do all the tortillas you want to use at once and stack them on a few paper towels to drain. Add more oil to the skillet on medium heat. Dry your hot dogs to make sure there is not water to splatter in the oil. Wrap in a corn tortilla and place seam side down in the pan. Fry until the bottom side is brown and crispy, then turn to the next side. Continue cooking and turning until all sides are crisp. Remove from the pan and drain on a paper towel. Eat hot with ketchup and mustard dip (my favorite), salsa or hot sauce.
