Crispy Curry Roasted Cauliflower
2 large heads of cauliflower
1/4 cup melted butter or Miyokos plant butter sticks
2 tablespoons olive oil
1 1/2 tablespoons curry powder
1/4 teaspoon garlic powder
salt and pepper to taste
Garnish
plain Greek yogurt or Vegan Greek Yogurt
fresh herbs
Preheat the oven to 425F and place the rack in the center of the oven. Combine butter, oil and spices in a small bowl. Cut cauliflower heads into slices 3/4” thick or break into florets. Coat with butter spice mixture. Lay on a large flat baking sheet in a single layer. Roast for 15 minutes and then stir to brown all sides. Cook for another 15 minutes or until crispy and browned on the edges and soft in the center. The tiny really crispy bits are the best part! Enjoy immediately or pair with some Greek or plant yogurt and a dash of fresh herbs.
