If you can melt it, you can make it. Chocolate lovers are going to want to eat this! It looks like a hot mess but it’s actually a delicious candy. Rocky road candy uses marshmallows and other chocolate covered goodies to make this bumpy easy treat.
You’ll need some chocolate chips and then grab whatever nuts, pretzels marshmallows and/or dried fruit you can find. Today I am using Reese’s Peanut Butter Chips, marshmallows, gluten-free pretzel pieces, peanuts and cashews.
Gluten-Free Rocky Road Candy with Pretzels and Peanuts
Melt 3 cups semisweet and/or milk chocolate chips and 1 tablespoon of butter on in the microwave. Stir often to make sure it doesn’t burn.
Add
-2 cups marshmallows cut into chunks
1/2 cup peanuts (reserve some for garnish)
1/2 cup roasted lightly salted cashews (reserve some for garnish)
1/2 cup Reeces Peanut Butter Chips (reserve some for garnish)
1/2 cup gluten-free pretzels (reserve some for garnish)
Stir well and pour out into a silicone mat. Spread to about 3/4” tall. Garnish top with bits of nuts, pretzels and chips if desired. Cool and slice into pieces. I like to put bark in muffin cups or stack them on a pretty platter. Store in a covered container for a up to a week.
