Green fudge? I know it looks like the Grinch but this tastes too good not to try! I love green tea ice cream and this matcha flavored fudge has the same creaminess and strong green tea punch. There is a splash of vanilla to add a bit of mellow sweetness that just hits the spot. This fudge has caffeine in it so limit the late night eating to a few pieces!
Matcha(Green Tea) Fudge
Matcha Mix
2 teaspoons @navitas matcha powder
2 tablespoons salted butter
1 teaspoon vanilla extract
Fudge
1/4 cup butter
1/4 cup light corn syrup
1 1/2 cups granulated sugar
1/2 cup evaporated milk
pinch of salt
1/4 cup powdered sugar
Set aside a silicone mat or greased pan for the fudge.
Mix the matcha, vanilla and 2 tablespoons of melted butter together in a small cup. Set aside.
Cook the butter, granulated sugar, corn syrup, milk and salt in a heavy saucepan while stirring until the candy reaches soft ball stage or 238F. Take off the stove. Stir in the matcha mixture. Next, stir in the powdered sugar and mix until the fudge begins to loose its sheen. Pour onto the prepared pan and smooth as desired. Cool and cut into squares. For a fun twist, you can add dried cranberry to the fudge right before you pour it out onto the pan. Enjoy!
