I wanted to use Key limes but couldn’t find any...so I used a regular ones instead.They still have the perfect sweet lime taste with rich cream cheese flavor to keep you reaching for them all day long! Lime Cheesecake No Bake Energy Balls
modified from a recipe by All Purpose Veggies
1/3 cup cream cheese, room temperature
1/4 cup vanilla protein powder
1/4 cup coconut flour or blanched almond flour
zest of one lime
2 tablespoons lime juice (key limes if you can find them)
1 tablespoons of honey or agave syrup
Coating
finely ground coconut or gluten-free cookie crumbs*
lime zest
In a small mixing bowl, blend together cream cheese, protein powder, coconut flour, and zest. Combine until smooth. Add the juice and honey and mix completely. Add more flour or juice if the balls are too moist or dry to shape. Add a dash of matcha for some color and caffeine or food coloring if desired. Scoop or roll into balls 1’ in diameter. Coat balls in finely ground coconut or cookie crumbs for a more cheesecake taste*. Chill for the best flavor. Store in the fridge in an airtight container for up to 3 days. Enjoy!
*the cookie bits do get soft in the fridge so if you use them eat them right away!
