Can I make hummus with this? This delicious and pretty twist on traditional hummus has some Asian flavor with some sesame oil and ginger added. It would also be great with lemon juice instead of rice wine vinegar but I had no lemons!
Edamame Hummus
1 1/2 cups shelled edamame (I used frozen)
2 cloves garlic
3 1/2 tablespoons rice wine vinegar or 3 tablespoons lemon juice
1/4 cup + 1 tablespoon tahini
3 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon ginger paste or fresh chopped ginger
Dash of toasted sesame oil
Optional:dash of coconut aminos(Adds a great bit of flavor but the hummus will not be as bright green in color if you add this)
Blend all ingredients until smooth. Add more oil or vinegar/lemon juice if it’s too thick. Garnish with olive oil and red pepper flakes and cilantro. Serve with veggies or almond crackers.
