Easy Gluten-Free Apple Pie Filling
makes ~2 cups of filling
4 Honeycrisp** apples, peeled and chopped into 1/2” dice
1 tablespoon lemon juice
1 tablespoon cornstarch
3 tablespoons brown sugar
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
pinch salt
Combine all ingredients in a saucepan over medium heat. Cook until apples begin to soften and release moisture. Turn up heat to medium-high and continue cooking and stirring until apples are tender and liquid has thickened. If apples are not soft and you have no liquid, add a 1/4 cup of water and continue cooking until apple are soft but not falling apart. Repeat if necessary. Store filling in a lidded jar for up to a week.
