I looks like wheat but it’s not! How did I make this delicious Wheat Kale Berry Salad with Apple Cider Dressing gluten-free? I used gluten-free Steel Cut Oats instead. Here is what I did. Modified from the Love and Lemons recipe for Wheat Berry Salad.
Substitutions
-Oats for wheat- I cooked 2 cups of Steel Cut Oats with 1/2 teaspoon of salt in 6 cups of water for 11 minutes. Stir this to prevent a boil over. You want to cook the oats so they are still chewy and not creamy. Rinse oats in cool water, drain and cool to room temperature. Stir them once to ensure grains do not stick together.
-Golden sweet potato instead of butternut squash… I’m not a squash lover.
-Added 1/2 cup chopped radicchio
-used fresh sage as a garnish only instead of inside the salad
