Gluten-Free Gingerbread Waffles
Dry Ingredients
1 3/4 cups Cup4Cup Gluten-Free flour
1/4 cup oat flour
1 tablespoon brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
21/2 teaspoons ginger
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon cocoa powder
Wet Ingredients
1/4 cup melted butter
2 large eggs
1 3/4 cups buttermilk or milk plus 1 tablespoon lemon juice
1/4 cup unsweetened applesauce
2 tablespoons molasses
1 tablespoon honey
In a large bowl, whisk together dry ingredients. Set aside. In a medium-sized bowl mix all wet ingredients and add to dry. Stir to just combine. Cook in a greased waffle iron. Top with a dusting of powdered sugar maple syrup and whipped cream.
