Gluten-Free Gingerbread Chex Mix
modified from the Muddy Buddies recipe from Chex Cereal

Pour the cereal into a large bowl and set aside.
41/2 cups Corn or Rice Chex
Gingerbread Coating
2 T butter
1/2 cup white chocolate baking chips
2 T cashew butter or almond butter
1 tablespoon molasses
1 tablespoon honey
1/2 teaspoon cinnamon
1/2 teaspoon ginger
pinch of ground cloves
pinch of salt if desired (my nut butter was unsalted so I added some)

Microwave the gingerbread coating ingredients for 30 seconds in a large microwave safe bowl. Stir to completely to mix. If some chips are not melted, add about 10 more seconds of time and stir to combine. Pour gingerbread coating over cereal and mix thoroughly.

Place 3/4 cup powdered sugar to a large zip top plastic bag. Pour gingerbread coated cereal into the bag and zip shut. Shake gently to coat cereal with sugar and spread it out on a tray until cool.
