My gluten-free Carrot Cake is such a satisfying bake to eat. Moist and delicious with tons of sweet carrots, the perfect amount of spice and a luscious cream cheese frosting. It’s the best I’ve ever had and my family agrees with me. You need to try it! I also made a gluten-free, sugar free version with honey as carrot cupcakes for my sister… they were yummy and just what she wanted.
