Gluten-free Strawberry Chocolate Marshmallow Cereal Bars
modified from Kellog’s Rice Crispy Bars
makes 8”x8” pan
3 tablespoons butter
5 cups marshmallows
1 ounce package Freeze dried strawberries or mixed berries (reserve about 7 whole pieces to decorate the finished bars)
5 cups Strawberry and Chocolate Cheerios or other berry cereal
2-3 tablespoons mini chocolate chips
Line with parchment paper or lightly butter a 8”x8” baking pan. Open the berry bag and press out the air, then reseal. Crush the berries with a rolling pin by rolling back and forth over the closed bag until no large bits remain. Set aside. In a large microwave-safe bowl, melt 3 tablespoons of butter with the marshmallows. Heat for about 2-3 minutes or until ingredients are puffy and melted. Stir to combine with a stiff rubber spatula or wooden spoon. Add the crushed berries and mix in a bit, then stir in the cereal thoroughly. Quickly transfer into the prepared pan and press down with parchment paper and a flat measuring cup or buttered hands. Press a few pieces of dried fruit on top and sprinkle with mini chocolate chips. Press in down lightly. Wait for the bars to set. Cut into squares. These are best eaten the same day as they are made.
