Banana’s Foster inspired my newest take on oatmeal and it’s super quick and easy to make. It makes a great gluten-free breakfast that’s a real treat! Another cool thing about this dish is it’s amazing made vegan as well! I used vegan butter(stick butter) and browned it then added oat milk instead of dairy for a phenomenal sauce just as tasty as the one with milk!
Gluten-Free Bananas Foster Oats
makes 2 servings
Prepare the gluten-free oats how you like them. I used steel cut oats today but old-fashioned also works. Spoon the cooked oats into a wide bowl.
Slice one large banana into ovals and brown on medium-high heat in a pan with a little butter. Place bananas on top of oats.
In the same pan, brown 2 tablespoons of butter and then add 2 tablespoons of brown sugar. Stir in 2 tablespoons of milk, pinch of salt and 1/4 teaspoon rum or vanilla extract. Cook briefly until thickened. Ladle sauce over the bananas. Top with pecans and mini chocolate chips. Sprinkle with a bit of cinnamon. Serve with a bit of cream or milk. Enjoy!
