Vegan Herb and Sun Dried Tomato Dip
1-2 cloves of garlic chopped finely or pressed*
2 Tablespoons olive oil
4 Tablespoons sun dried tomatoes packed in oil, chopped (save the oil for garnish)
1 Tablespoon fresh oregano, chopped finely
1-2 Tablespoons Fresh Basil
1/4 teaspoon salt
1/4 teaspoon dried mixed herbs like Herbs de Provence
1/8 teaspoon ground black pepper
1 seven ounce block of vegan cream cheese
Garnish
sun-dried tomato oil
balsamic glaze
pepper
fresh herbs
Blend together garlic, oil, herbs and spices and heat in microwave until warm to bring out the flavors. Let cool.
Stir in cheese to combine throughly and put in a serving bowl. Make a pattern in the top of the dip for the oil to settle into and make pretty.
Garnish with tomato oil, sprinkles of balsamic glaze and a dash of pepper or other favorite spice. Top with fresh herbs.
Serve with my favorite @simplemills crackers, gluten-free chips and veggies. Enjoy!
*if you want a more mild garlic flavor zap those cloves for about 10 seconds in microwave before adding!
