Four Ingredient Caramel Syrup
1 cup granulated sugar
1 cup water
pinch of salt
1 teaspoon vanilla
Heat one cup of sugar over medium/medium high heat until it begins to melt at the edges. Stir gently to melt any sugar crystals and mix in melted sugar with unmelted. If sugar chunks stick to the spatula, scrape them off to melt into sauce. Continue to heat and stir for about 5 minutes or until the melted sugar is a deep caramel color. Remove from the heat and slowly add the water, vanilla and salt. Water will spit and boil up so be careful. Return to the heat and stir until all the caramel is melted into the water. Continue cooking until the liquid is the thickness of syrup**. Remove from the stove and pour into a heat-proof jar. Syrup thickens after cooling. Let cool and store in the fridge for one week.
