Gluten-free Strawberry Chocolate Marshmallow Cereal Bars
modified from Kellog’s Rice Crispy Bars
Makes one 8”x8” pan
3 tablespoons butter
5 cups marshmallows
1 ounce package Freeze dried strawberries or mixed berries (reserve about 7 whole pieces to decorate the finished bars)
5 cups Strawberry and Chocolate Cheerios or other berry cereal
2-3 tablespoons mini chocolate chips
Line an 8”x8” baking pan with parchment or grease instead. Open the berry bag and press out the air, then reseal. Crush the berries with a rolling pin by rolling back and forth over the bag until no large bits remain. Set aside. In a large microwave-safe bowl, melt 3 tablespoons of butter with the marshmallows. Heat for about 2-3 minutes or until ingredients are puffy and melted. Stir to combine with a stiff rubber spatula or wooden spoon. Add the crushed berries and mix again and then stir in the cereal. Quickly transfer the mixture into the prepared pan and press down with using a sheet of parchment paper to prevent cereal from sticking to you. I like to use a flat measuring cup to make the top flat and to press down the corners. If you don’t have parchment, you can press down with lightly buttered hands instead. Press in some dried berries pieces and mini chocolate chips onto to garnish. Wait for the bars to set. Cut into squares. These are best eaten the same day as they are made.
