Dark Chocolate Blood Orange Truffles
2/3 cup heavy cream
1 1/2 cups dark or semi-sweet chocolate chips
2 tablespoons butter
2 teaspoons blood orange zest
2 tablespoons blood orange juice
2 tablespoons granulated sugar
1/4 teaspoon vanilla extract
Heat cream until hot but not boiling. Add chocolate chips and butter. Cover and let sit for about 5 minutes or until all the chocolate has melted. Stir until smooth. Heat orange juice and sugar in the microwave for about one minute. Mix until sugar dissolves. Stir orange juice mixture into the chocolate cream mixture. Let cool in the fridge until firm ~ 2 hours. Scoop into 1” balls and roll in cocoa powder. Store in the fridge until ready to eat for up to 1 week.
