My favorite fourth of July dessert is Strawberry Shortcake and it shouldn’t involve bright red goo in a jar or a premade cake from the store… As a kid I remember my mom patting out the dough on a floured board and cutting it into shapes with a drinking glass. Spacing them evenly on a blackened cookie sheet and brushing them with cream and a sprinkle of sugar. These sweetened rich shortcakes with browned tops and a soft interior were filled with fresh sugared strawberries, a squeeze of lemon juice and newly whipped cream. Lately I’ve been adding lemon curd too which is fun. It was a special Summer treat I looked forward to every year and you should too.
