Add roasted pistachios to this cookie for a festive treat. If you haven’t made macaroons, this is your chance to try something fun and super easy. I use the recipe from Once Upon A Chef and then I roll the cookies in chopped roasted, salted pistachios for great nutty flavor. Roll them in crushed candy canes for my other favorite variation. The sweet peppermint crunch is surprisingly good with chewy coconut and dark chocolate. I have used natural unsweetened coconut and also the conventional kind for this recipe. The natural is more dry so add a tablespoon more sweetened condensed milk if you choose to use it and let the dough hydrate for 10 minutes before scooping.
