I can’t wait for leftover roast chicken so I can make this Curry Chicken Salad. It’s one of my favorite gluten-free sandwiches and I also love to eat it with my favorite @simplemills Almond Crackers. The dressing is sweet and a bit spicy with honey and lots of curry powder. Add a dash of cayenne pepper for even more zip. The salad gets its crunch from ripe apples, celery and sweet onion. Add more texture with chopped almonds or cashews on top.

My Best Curry Chicken Salad
2 cups cold chopped, cooked chicken
2 stalks of celery, finely diced
1/2 apple, finely diced
1/2 a medium-sized sweet onion, finely diced
3/4 cup mayo
2 tablespoons fresh lemon juice
2 teaspoons curry powder
1/2 cup chopped roasted cashews
6 tablespoons currants or raisins
1 tablespoon honey
salt and pepper to taste
optional: a dash of cayenne pepper

Mix the dressing together in a small bowl and then add it to the chopped ingredients and fruit. Dress with baby mixed greens. I add nuts right before I make my sandwich so they don’t get soggy. Some fun variations are adding some chopped candied ginger, coconut or substituting the raisins for dried cranberries.
