Inspired by 177 Milk Street’s genius take, I made it my own with a few tweaks:✨ Used my toaster to dry the bread (no oven hassle!)✨ Swapped semolina for cornmeal—hello, gluten-free crunch!Best part? Three Simple Steps (you can use with your recipe instead of the one below)
1 Toast the bread (I used gluten-free Canyon Bakehouse Hawaiian Bread)
2 Add 1.5 tablespoons cornmeal to your egg mixture and some sugar too and let soak 10 minutes
3 Sprinkle both sides of soaked bread with sugar before cooking
Best French Toast Gluten-Free Edition

Makes 4 gluten-free slices
4 slices of Canyon Bakehouse Hawaiian Gluten-Free Bread
Egg Mixture
1 large egg
1/2 cup cream or half and half
1/2 teaspoon vanilla extract
1/2 tablespoon granulated sugar
1 1/2 tablespoons cornmeal (use regular grind nothing too fine or coarse)
extra sugar to sprinkle on top
Mix the egg ingredients and let soak for 10 minutest to thicken. Toast the bread lightly so it’s dry not brown. Stir egg mix and dip both sides of the bread making sure you spoon some of the cornmeal onto it. Don’t soak the bread long since this is gluten-free bread and it will fall apart! Sprinkle sugar on both sides of the soaked toast and brown on medium heat in melted butter until brown. Flip toast and brown the other side. Remove from heat and serve with your favorite french toast topping.
