Gluten-Free Fruity Protein Bites
Bright, chewy, and packed with superfood power!Yields: ~15 one-inch bites (depending on how many you sneak while making them 😉)
What You’ll Need:
Food Processor
Ingredients:
Base Mixture:
* ½ cup blanched almond flour
* ½ cup dried apricots (California or slab-style = max flavor)
* ¼ cup dried unsweetened cranberries, cherries, or blueberries
* ½ cup vanilla protein powder (use a vegan one for dairy-free)
Sticky Mix-Ins:
* 2 Tbsp honey (add more if you want them sweeter)
* ½ cup smooth almond butter
Flavor Boost:
* ¼ cup Navitas Pomegranate Powder
* 1 Tbsp lemon juice (add more if needed for brightness)
Coating:
* ½ cup unsweetened dried coconut flakes
* 1 Tbsp pomegranate powder
Grind together in a spice grinder or small food processor until fine. Pour into a small bowl for rolling.
Instructions:
1. Blend the base.In a food processor, combine almond flour, dried apricots, dried berries, and protein powder. Pulse until no large pieces remain.
2. Add sticky ingredients.Add honey and almond butter. Blend until the mixture is well combined and sticks together slightly.
3. Boost the flavor.Add pomegranate powder and lemon juice. Blend again until the mixture becomes evenly pink and slightly sticky but still textured.
4. Adjust if needed.If the mix feels too dry, add a bit more honey or lemon juice. Too sticky? Sprinkle in a little more almond flour.
5. Shape into bites.Scoop and roll into 1-inch balls. You should get around 15 (unless some "mysteriously disappear").
6. Roll in coating.Toss each ball in the coconut-pomegranate mix until coated.
7. Chill & store.Store in an airtight container in the fridge for up to 1 week (but they probably won’t last that long).
