Coffee drinks are a gluten-free treat I love indulging in…. But honestly buying them can be so expensive. That's why I love making my own. This delicious iced Coconut Cream Cold Brew Coffee tastes like it's straight from a fancy shop but without the high price tag. 
To make the syrup, you'll need 1 cup of full-fat coconut milk and 1 cup of granulated sugar. Combine the two in a small saucepan and stir until boiling. Cook until the sugar dissolves and then let the mixture cool completely.
Making your iced coffee, Whisk together ¼ cup cream, ¼ cup milk, 2 tablespoons coconut milk, and 2-3 tablespoons of the coconut syrup you just made. Pour this creamy mixture over a large glass filled with ice, and 6 ounces of strong cold brew coffee*. Garnish with toasted coconut chips. Enjoy! Store the extra syrup in the fridge so that you can make this treat again and again. I hope you love it as much as I do!
*I make my cold brew coffee by mixing 2 cups of cold water and  ½  cup of ground coffee in a jar large lidded jar. Let it sit for 12-24 hours. Strain the grounds out and store the coffee in the fridge until ready to use.
