This is son’s favorite new lunch recipe and here is my version
Melt and crisp 4 slices of pepper jack cheese over medium heat in a non-stick skillet. Make sure the slices touch and knit together. I use a spatula to push the edges against each other. Keep cooking until the whole cheese wrap browns completely. Turn off stove and take off the heat. Let it rest for a few minutes. Remove crisp from pan sliding it onto a plate covered with a paper towel to blot the oil. Wipe any excess oil out of the pan. Return crisp to warm pan and place thin turkey slices down the the middle in a line. Spread with Dijon mustard and add 1/4 cup fresh greens and thinly sliced tomato. Add extra cheese if you want some that’s not crisp. Roll together and enjoy!
