Gluten-Free French Breakfast Puffs
Adapted from Five Heart Home’s recipe
Dry ingredients
2 3/4 Cup4Cup Multipurpose gluten-free flour
1/4 cup blanched almond flour or other nut flour or 1/4 cup gluten-free flour
1 teaspoon sweet rice flour
1 tablespoon baking powder
3/4 teaspoon salt
1/4 teaspoon nutmeg
Wet Ingredients
2/3 cup butter, softened
1 cup granulated sugar
2 large eggs
3/4 cup milk
1/4 cup unsweetened applesauce
1 teaspoon vanilla
Topping
1/3 cup butter, melted in a cereal bowl
3/4 cup granulated sugar in a cereal bowl with 1 1/2 teaspoons of cinnamon
Preheat the oven to 350F and line a muffin tins.
Whisk together the dry ingredients in a medium-sized bowl and set aside.
In a large bowl, combine butter and sugar until smooth. Add eggs and mix thoroughly. Add milk, applesauce, vanilla and stir until combined. Add the dry ingredients and stir until just mixed. Scoop into muffin cups and bake for 15-20 minutes. Puffs will be golden brown and spring back in the center when touched. Cool for one minute. Dip in melted butter and then in cinnamon sugar mixture. Eat immediately and enjoy!
