8 Minute Microwave Applesauce
41/2 cups chopped, peeled and diced apples.
Spices 1/2 teaspoon cinnamon and or 1/8-1/4 teaspoon ground ginger
Optional
lemon juice
honey or other sweetener
apple cider
Combine the ingredients in a large microwave-safe bowl with high sides. Cover and microwave for 4 minutes and then stir. The bowl may be really hot so use mitts to take it out of the microwave! Cook another 4 minutes or until the apples are softened. Smash for chunky apple sauce or blend** for a thick smooth consistency. Taste your applesauce, if you want more tartness add a splash of lemon or sweeten if it’s too sour. Store in the fridge for up to 4 days.

**If your apples did not release enough juice to blend well, add a tablespoon of apple cider(best) or water and blend more. Repeat until you get the desired texture.
