Smoky Sun Dried Tomato and Basil Bread Dipping Oil

Hi Bakers,
If you love bread dip oil, try this one with rich, smoky tomatoes. It's addictive and hard to stop eating! I made some Focaccia bread and this is the best dip!
Smoky Sun-dried Tomato and Basil Dipping Oil
1/3 cup chopped smoked Sun Dried Tomato or plain sun-dried tomato
2 cloves of garlic*
2 ounces olive oil plus more for plating
1/3 cup fresh basil leaves, loosely packed
1/4 teaspoon salt
1/8 teaspoon ground pepper
Balsamic vinegar glaze to taste
shaved parmesan cheese
Blend basil, olive oil, salt, and pepper until smooth. I used a stick blender which took a few minutes but worked well. Using a wide flat bowl, spoon the basil mixture into the center. Drizzle olive oil around the outside. Sprinkle with sun-dried tomatoes. Drizzle some balsamic glaze over the top or dot around the outside. Top with parmesan cheese and a bit of fresh basil. You want to use about 1-2 tablespoons since it really adds to the flavor of the dipping oil. Enjoy with Focaccia or other sturdy gluten-free bread. I used the Caputo gluten-free flour Focaccia Bread recipe on the bag. A half a recipe makes a large bread.
*For milder flavor and blendability, I microwaved the garlic cloves for about 10 seconds. You can use fresh clove, but use a garlic press or chop them for easier blending.
