Gluten-Free Vanilla Poppy Seed Donuts with Blueberry Glaze

Hi Bakers! This is the second time I’ve worked on a recipe for poppy seed donuts…the first version was a mess and the consistency was rubbery! This time I used milk instead of sour cream and made sure to mix them until just combined. There is more almond flour than I used last time, making the donuts have a moist but dense crumb that feels just right. I wanted a gorgeous donut with vibrant color so I decided blueberry icing would be just the thing. I amped up the flavor by adding dried and frozen blues to the icing. A bit of lemon juice really rounded out the berry taste. Add more sugar (up to 3/4 cup) if you want a bit sweeter donut since these are just barely sweet to balance the sugar in the icing. Gluten-Free Vanilla Poppy Seed Donuts with Blueberry Glaze
Dry
1 1/4 Cups gluten-free flour
3/4 cup blanched almond flour
1 teaspoon sweet rice flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon poppy seeds
Wet
4 tablespoons melted butter
2 large eggs
4 tablespoons milk or buttermilk
1/2 cup unsweetened applesauce
2 teaspoons vanilla extract
Blueberry icing
2-3 tablespoons thawed frozen blueberries
1/2 cup confectioners sugar
a squeeze of fresh lemon juice
2 teaspoons crushed freeze-dried blueberries plus more to top donuts
Preheat the oven to 350F and place the rack in the middle position of the oven.
Spray the donut pan with oil.
In a large bowl, whisk together dry ingredients and set aside.
In a medium-sized bowl, mix wet ingredients together until well combined.
Add wet to dry and stir until just mixed.
Pipe or scoop into donut pans and smooth into curves of the pan if needed. Bake for 10-13 minutes or until donuts are slightly browned on top and spring back when touched with a finger.
Cool on a rack and ice if desired.
Mix icing ingredients in a small bow mixing well to mash blueberries so they are in small pieces. You want the icing to be pretty thick so your donuts do not get soggy! Adjust the amount of sugar or liquid to achieve the right consistency. Sprinkle icing with crushed freeze-dried blueberries and enjoy!
