Gluten-Free Peanut Butter Cup Granola

Gluten-Free Dark Chocolate Peanut Butter Granola
Dry Ingredients
4 cups gluten-free old-fashioned oats
Wet Ingredients
1/2 cup melted butter or vegan butter
2/3 cup honey
1/4 cup brown sugar
2 tablespoons natural peanut butter
1/3 cup cocoa powder
pinch of salt
1/2 cup peanut butter chips
1/2 cup mini semi-sweet chocolate chips
Optional: 1/4 cup chopped roasted peanuts and additional mini chips and peanut butter chips
Preheat oven to 250F and place rack in the center position.
In a microwave-safe bowl, heat butter, honey, and brown sugar in the microwave until sugar begins to dissolve and the mixture comes together, this takes about 2 minutes. Stir well, then add peanut butter, cocoa powder, and salt. Combine thoroughly. This mixture will be very thick and look like fudge. Stir in oats with a sturdy spoon or a Dutch whisk and spread in a single layer over a large baking tray lined with parchment paper. Bake for 20 minutes and then stir the mixture and spread it out again. Bake another 25 minutes or until the granola has lost most of the moisture and is becoming crisp. (This is more of a drying process than a bake so it takes a while.) Remove from the oven and add peanut butter chips and chocolate chips. Place the granola back into the oven for 5 minutes. You are letting the chips melt a bit in this step. Remove the granola and stir the chips gently into the granola so it clumps and makes chocolate and peanut butter clusters. Cool thoroughly. Add more chocolate chips, peanut butter chips, and peanuts if desired. Store in an airtight container. I like to store mine in the fridge and it keeps for about a month. Enjoy!
