Gluten-Free Mummy Chocolate Donuts with White Chocolate Icing

Hi Bakers, Who wants a tasty mummy? I do!! These fun gluten-free chocolate donuts are so rich and delicious! A quick spooky treat that bakes in minutes and the perfect weekend sweet. These are one of my new favorite donuts so I will be making them way more often than just Halloween -Carolyn
Gluten-free Mummy Chocolate Donuts with White Chocolate Icing Adapted from King Arthur Flour’s recipe for Chocolate Fudge Donuts.
Dry Ingredients
1 cup Cup4Cup Multipurpose Flour
1/4 cup blanched almond flour
3/4 cup light brown sugar
1/2 cup cocoa powder
1 teaspoon sweet rice flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon espresso powder
Wet Ingredients
8 tablespoons melted butter
2 large eggs
1/4 cup milk +1 tablespoon
4 tablespoons unsweetened applesauce
1 teaspoon vanilla
1 teaspoon white vinegar
Icing
12 ounces white chocolate
4 ounces milk
Heat milk and add chips and stir to melt.
Preheat oven to 350F.
Whisk dry ingredients together in a large and set aside. In a medium-sized bowl whisk together wet ingredients. Pour wet into dry and mix until just combined. Pipe or scoop into a donut pan. Bake for 12-15 minutes or until the donut springs back when touched. Cool completely on a rack. Dip in white chocolate icing and decorate with sprinkles or eyeballs and white chocolate shards for a fun effect.
