Gluten-Free Mint Oreo Cookie Butter Bites

Make these cute gluten-free Oreo cookie butter bites for Saint Patrick’s Day. They look festive with their green sprinkles and white chocolate shell and will surely be a hit with everyone! What do they taste like?? Magic is the right word for it… Take America’s favorite gluten-free chocolate cookie and make it into cookie butter, mix it with candy, and cover it with white chocolate. Gluten-Free Mint Oreo Cookie Butter Bites
2 cups gluten-free Oreo cookies with centers removed, crushed or pulverized in a food processor
2 ounces cream cheese
1 tablespoon powdered sugar
2 tablespoons cocoa powder
1 box Junior Mints (3.5 oz)
1/4 cup semisweet chocolate, melted
1 teaspoon butter
3 teaspoons of milk
Optional for more mint flavor: 1/4 teaspoon Mint extract
Pulse cookies with sugar, and cocoa until fine crumbs. Add remaining ingredients except for milk. Pulse the mixture until it is very smooth and balls up a bit. Add milk by the tablespoon until the cookie butter is smooth and holds together. This takes about 2 minutes. Scoop cookie butter into a container and chill slightly until scoopable consistency. Scoop into balls about 3/4 inch in diameter, roll with your hand to make them smooth, and freeze until hard. Coat in melted white chocolate and sprinkle with gluten-free Oreo crumbs and green sprinkles. Let firm completely in the refrigerator. Keep chilled and enjoy!
