Gluten-Free Honey Cake (sugar-free!)

Hi Bakers,
If you want a regular cake, don’t try this one. Honey cake has no sugar added making this bake a uniquely flavored wonder. It’s less sweet than a traditional cake and has a dense texture with a moist but spongy feel. Lemon adds some depth to the cake without detracting from the pure honey taste. I think it’s better when it's cold and I like to add some honey or honey lemon drizzle on top for more sweetness. I used fresh edible flowers and powdered sugar(or no sugar powdered sugar can be used) for a bright and lovely garnish. Eat it how you like it. I hope you try this unusual and tasty treat ~Carolyn
Gluten-Free Honey Cake

Makes one 9” round cake
Dry Ingredients
1 3/4 Cups Cup4Cup Multipurpose Flour
1 teaspoon sweet rice flour
1/4 cup blanched almond flour + 1 tablespoon
1/2 teaspoon baking soda
1/2 teaspoon salt
Wet Ingredients
6 tablespoons butter, softened
1 cup honey
3 large eggs
1/2 teaspoon vanilla extract
1 tablespoon lemon juice
zest of one lemon
1/2 cup sour cream
Preheat the oven to 350F. Line a 9” cake pan with parchment paper and grease the sides.
În a medium-sized bowl, whisk together dry ingredients and set aside.
In a large bowl, beat the butter and honey until smooth. Add the eggs one at a time and beat in. Add vanilla extract, lemon juice, and lemon zest, and mix for a minute more. Add dry ingredients and beat until just combined. Stir in sour cream. Scoop batter into prepared pan and bake for about 34 minutes or until a skewer inserted into the middle of the cake comes clean. Let cool completely. You can dust with powdered sugar(or sugar-free powdered sweetener) and garnish with fresh edible flowers or berries. Drizzle the top with honey for a bit more sweetness if desired.
