Gluten-Free Frosted Banana Snack Cake

You can mix it together in 15 minutes but you’ll never want to stop eating it! Frosted Banana Snack Cake is easy and delicious, perfect for any get-together or afternoon treat. Use sprinkles to add a festive touch and some whimsy. I modified my friend’s recipe for gluten-free by replacing the flour type and adding some of my usual ingredients to make the dough better. I also replaced the sour cream (because I didn’t have any) with a smaller amount of buttermilk. This moist and tender cake is full of banana flavor and generously topped with lots of rich cream cheese frosting. You need to make this soon! Enjoy~Carolyn
Gluten-Free Frosted Banana Snack Cake
makes 1- 9” x 13” cake
Dry Ingredients
1 3/4 cups Cup4Cup Multi-purpose flour
1/4 cup blanched almond flour
1 teaspoon sweet rice flour
1 teaspoon baking soda
1/2 teaspoon salt
Wet Ingredients
1/2 cup butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 cup ripe bananas, mashed
3/4 cup buttermilk
Frosting
1/2 cup butter, softened
8 ounces cream cheese, room temperature
1 teaspoon vanilla
2 cups powdered sugar
Preheat the oven to 350F. Grease a 9” x 13” pan and set aside.
In a medium-sized bowl, whisk dry ingredients together.
Cream sugar and butter together in a large bowl until smooth and fluffy. About 3 minutes. Next, beat in the eggs. Add bananas and combine for a minute or two. Add buttermilk and mix until smooth. Scrape down the bowl as needed. Stir in dry ingredients until just mixed. Pour batter into the greased pan and smooth the top. Bake for about 25 minutes or until a toothpick comes clean when inserted into the center of the cake. Cool for 10 minutes. Run a knife around the edge of the cake and cool completely. When the cake is cool, prepare the frosting.
Cream Cheese Frosting
Combine the frosting ingredients in a medium-sized bowl and beat until smooth and fluffy.
Frost the top of the cake and decorate it with sprinkles or a dash of cinnamon.
