Gluten-Free Fresh Apple Cake

Hi Bakers,

So, I've been indulging in a lot of candy this week, and I was looking for a different kind of sweet treat. That's when I decided to bake a lightly sweet cake with loads of fruit. I know it may sound like I made a mistake, but trust me, this recipe has 3 cups of chopped apples and it tastes amazing! The cake is just enough to hold the apples together, and I love how fresh and apple-y it tastes. This is super easy to make, so all my fellow apple lovers out there, you need to try this one out! Gluten-Free Fresh Apple Cake

Modified from Once Upon a Chef

makes one 9” cake

Dry

3/4 cup Cup4Cup Brand gluten-free multipurpose Flour

1/4 cup blanched almond flour or other nut flour

1 teaspoon sweet rice flour

1 teaspoon baking powder

1/4 teaspoon salt

Wet

6 tablespoons butter, softened

2/3 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract  

1/8 teaspoon almond extract

3 tablespoons applesauce, unsweetened

3 tablespoons strong chai tea, room temperature

3  cups fresh apples, peeled, sliced and cut into 1/2” pieces

Preheat the oven to 350F. Line a 9” cake pan with parchment paper and set aside.

Whisk together the dry ingredients in a medium-sized bowl and set aside. 

In a large bowl beat the butter and sugar until well blended. Beat in the extracts, chai tea, and applesauce. Add the dry ingredients and mix until just combined. Stir in the apple and spoon into the prepared cake pan. Smooth the top for a more level surface. Bake for about 35-40 minutes or until a skewer inserted into the center comes clean. Let cool and sprinkle with powdered sugar. Enjoy!
