Gluten-Free, Flourless  Chocolate Monster Cookies

Hi Bakers, 

 This recipe fascinated me when I found it…there was no flour at all?? I love oats so I thought this is the best thing ever! But, when I made monster cookies the first time I felt like they were way too sweet, so I reworked the recipe to make it more of what I wanted. These are oat-y, chocolatey, and packed with peanut butter flavor and chocolate chips. Did I mention they have eyes too? How cute are they?? I made the following modifications for a more chocolate flavored less sweet cookie. 

-halved the amount of sugar and used only brown 

-added an extra tablespoon of peanut butter

-added two eggs (instead of 1.5 which would have been  the half recipe amount) 

-added 2 tablespoons of cocoa powder 

-used fewer chocolate chips and no candy

Modified from My Gluten-Free Kitchen’s Recipe

Dry Ingredients

2 1/4 cups old-fashioned gluten-free oats

1 cup semisweet chocolate chips, other chips, or candy-coated chocolates

1/2 cup packed brown sugar

2 tablespoon cocoa powder

1 teaspoon baking soda

1/4 teaspoon salt

Wet Ingredients

1/4 cup butter, softened

3/4 cup creamy peanut butter + 1 tablespoon

2 large eggs

 

Preheat oven to 350F and place rack in the middle position.

In a large bowl, whisk together dry ingredients and set aside.

In a medium-sized bowl, whisk together dry ingredients. Add wet into the dry ingredients and mix well. Pack into a large cookie scoop (or roll into 2.5 tablespoon-sized balls) onto a cookie sheet a few inches apart and press down a bit with your fingers. You want the cookie flattened to about 1/2 inch tall. Add google eyes candy decorations if desired. Bake for about 9 minutes or until the outer edge firms up but the center of the cookie is soft. Let cool on the cookie sheet for 5 minutes before trying to remove it. Store cooled cookies in an airtight container. These cookies are best enjoyed right away and tend to dry out quickly.
