Gluten-Free Cornbread Waffles

Hi Friends, Thanks for coming to check out this recipe :) If you love cornbread, you should make these fun and tasty waffles. They are a nice twist on the usual waffle but good enough that everyone will want to eat them. I like them with butter, honey, and fresh peaches...but you can just grab one and eat them on the go. I usually make extra to make sure I have enough to save for later. Enjoy! -Carolyn
Gluten-Free Cornbread Waffles
Dry
1 1/2 cups Cup4Cup gluten-free flour
1/2 cup cornmeal
1 teaspoon sweet rice flour
2 T granulated sugar
1 T baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
Wet
1 1/2 cups buttermilk
2 large eggs
1/3 cup vegetable oil
2 T applesauce
Whisk dry ingredients together in a medium-sized bowl and set aside
Mix wet ingredients together in a large bag and then mix wet into the dry. The batter will be thick. Scoop into waffle iron and cook according to iron’s directions. Eat immediately or cool in a rack. If you want to freeze some, cook until lightly browned and cool on a rack. You want to brown them very lightly if you are going to freeze them so they toast to the correct brownness. Freeze flat and store in a bag. Reheat them in the toaster. I love these with butter and honey they are just like a thin easy-to-eat slice of cornbread. Peach or apricot jam is also really nice!
