Gluten-Free Berries and Cream Granola

Hi Bakers,

I wanted some berry granola at the store the other day but I didn’t feel like paying six dollars for a small bag…so I made my own! I love the crisp tart fruit with white chocolate granola clusters. This isn’t a very sweet cereal because I like to add honey when I eat it. Feel free to add 2 tablespoons of brown sugar to the butter and honey mix to increase the amount of sweetness if that’s how you like it. This granola is also very good with greek yogurt or as a snack -Carolyn

Berries and Cream Granola

4 cups old-fashioned gluten-free oats

3/4 cup flaked coconut

1/4 cup raw pecans or almonds

1/2 cup butter, vegan butter, or oil

1/2 cup honey or maple syrup

1/4 teaspoon salt

1/4 cup white chocolate chips

3/4 cup freeze-dried berries

Preheat oven to 275F. Line a large baking tray with parchment. Melt butter and add honey and salt. Stir together and add oats, coconut, and nuts. Stir to coat evenly. Pour onto a baking tray in an even thin layer. Bake for about 45 minutes or until granola is lightly browned and crisp. You may need to stir occasionally since the edges tend to brown more quickly. Sprinkle with white chocolate chips. Let sit for 5 minutes until soft. Mix together with oats so that there are some chocolate clusters covered in granola. Let cool completely. Add freeze-dried berries and seal it in an airtight container. I like to store my cereal in the fridge or freezer so it is extra crunchy and the milk is super cold. Enjoy!
