Coconut Berry Pops

Hi Bakers,

It's hot outside so eat something cold. Only coconut, honey, vanilla, and berries?? I wanted a popsicle without much effort and no sugar. These creamy Coconut Berry Pops are easy, vegan, sugar-free, and delicious! They are just the right balance of sweet and tart with concentrated freeze-dried berries and honey. Add the larger amount of sweeter if you like and be sure to taste it before freezing and add more honey if needed! Have fun and stay cool -Carolyn

Coconut Berry Pops

makes 6 pops

a 13.6-ounce can of coconut milk

1/4 cup coconut chips

2-4 tablespoons honey

1/2 teaspoon vanilla extract

1 ounce freeze-dried strawberries, crushed

1/4 cup frozen berries, in pieces

Blend coconut milk, honey, vanilla, and coconut chips. Pour into popsicle molds about 1/3 of the way full. Pour 1/3 of the coconut mixture into another cup and blend with the dried berries and 1/8 cup of frozen berries. Pour/spoon into the molds. Sprinkle with some of the frozen fruit bits. Top popsicles with the last 1/3 of coconut milk and stir the layers in the mold with a chopstick or other thin utensil to mix the colors and textures. Top with mold lid and add sticks. Freeze for a few hours until solid. Enjoy!
