Hi Bakers! No need to heat up your oven for this fun vegan, sugar, and dairy-free treat! Apricot Date Bites are a recipe I Modified from Carole Bloome’s Apricot Date Balls. I was looking for a sweet treat for my sister who doesn’t eat sugar and I found this great recipe in one of her books. I changed it by adding chopped cashews, lemon juice, and zest. I like how the lemon brings tartness to these sweet treats. The cashew crunch brought some welcome texture and a bit of salt too. Try these and see how long they last at your house… they usually don’t make it to dinnertime around here😂 -Carolyn

Apricot Date Bites

Adapted from Carol Bloome’s Recipe for Apricot Date Balls

Juice of half a lemon

Zest of 1 lemon

2 cups slab or California apricots

2 cups dates ( I like Medjool)

2 tablespoons honey

1/2 cup roasted cashews, chopped

Finely shredded unsweetened coconut

Combine lemon, zest, apricots, dates, and honey in a food processor and pulse until the mixture starts to come together. Add chopped nuts and mix until combined. Roll into balls and cover in finely chopped coconut. Store in an airtight container in the fridge for 1 week. Enjoy!
