Gluten-Free Strawberry Donuts

Hi Bakers!! My friend had a moist strawberry cake recently and I thought how good does that sound?? Since I really didn’t have time to make a cake today I made donuts instead!! I modified a vanilla donut recipe from As Easy as Pie for gluten-free and changed the flavor. These donuts are moist and strawberry flavored but not too sweet, making the berry icing taste perfect. You will want to add the dried berries to the batter and icing since it is what gives these donuts their great flavor and beautiful color. I think they’re the perfect bake for any breakfast or brunch with friends. Try them next time you want a little something sweet and send me some pictures I'd love to see what you're baking! Strawberry Donuts
Dry
3/4 cup Cup4Cup Gluten-Free Multipurpose flour
1/3 cup granulated sugar
1/4 cup blanched almond flour
1/4 cup freeze-dried strawberries, crushed + more for topping donuts
1 teaspoon sweet rice flour
1 teaspoon baking powder
1/2 teaspoon salt
Wet
2 tablespoons butter, melted
1 large egg
1/3 cup milk or Kiefer
2 Tablespoons unsweetened applesauce
1 teaspoon vanilla extract
Preheat oven to 350F. Grease donut pans. Whisk together dry ingredients in a large bowl. Mix wet ingredients together in a small bowl and add to dry ingredients. Mix until just combined. Pipe or scoop into donut pans 3/4 way full. Bake for 12-15 minutes or until donuts are slightly browned and spring back when touched in the middle. Cool on a rack. Ice with strawberry icing and top with crushed dried strawberries. Donuts are best eaten as soon as possible or on the same day. Enjoy!
Strawberry Icing
1/4 cup powdered sugar
2-3 strawberries, pureed
Mix together into a thick icing that you can dip the donuts into
