Hi Bakers, It seems like magic to transform quince fruit into ruby red jam! With 4 simple ingredients and some boiling…Ok a lot of boiling you will be rewarded with a gorgeous jam that tastes like honeyed pears. This is an unusual fruit like an apple that's available in the Fall. The flavor is unique and addictive and well worth a try. Use this beauty on toast or as a welcome addition to a holiday charcuterie board. Or just grab a spoon and eat some like I do Enjoy! ~Carolyn

Ruby Red Quince Jam

3 cups (about 4 fruits) quince peeled and cut into 1/2” dice

3 cups water + as much as needed***

Juice of 1 lemon

2 cups granulated  sugar

Add all ingredients to a heavy saucepan. Boil until the quince is soft and pink in color. If the jam is getting thick but not quite done, add a cup of water by and boil more. Continue to do this until the jam is the consistency you want and a beautiful pink color. This took me 60 minutes of boiling with occasional stirring on medium-high heat. Store in the fridge in a sealed jar for up to a few weeks.

*** The mixture may thicken before the jam is done and the fruit turns pink, add water and continue cooking. Keep adding water as needed to achieve the right color and consistency.
