Lemon Coconut Panna Cotta

Hello Friends! This is a great summer dessert! Looking for something refreshing and new? It's almost as easy as boxed flavored gelatin but so much more elegant and beautiful! It is cool and refreshing with a hint of lemon in a very smooth creamy gelatin. The strawberry sauce adds to the visual and taste appeal with its bright tart flavor and bold color. Lemon Coconut Panna Cotta
Recipe modified from the Lemon Panna Cotta Recipe from All Recipes.com
1 packet of unflavored gelatin
3 tablespoons fresh lemon juice
1/2 cup granulated sugar
1 1/2 cups cream
1/1/2 cups full fat coconut milk
zest of one lemon
Sauce
5-6 strawberries
1 tablespoon fresh lemon juice. Purée to make a sauce.
In a small bowl, soften gelatin in 3 tablespoons of lemon juice.
In a saucepan, combine sugar, cream, coconut milk, and zest over medium-low heat until the mixture is simmering and sugar is dissolved. Add softened gelatin and stir until dissolved. Strain and add to individual ramekins. Cool for about 4.5 hours in the fridge. Unmold by running a knife around the edge or setting the ramekin in hot water for a few seconds to loosen the panna cotta. Place a plate or bowl over the ramekin and turn it upside down. Garnish with strawberry puree and fresh fruit. Enjoy!
